Brown Butter Sea Salt Rice Krispy Treats

Browned Butter Sea Salt Rice Krispies

Reglar old store-bought rice krispy treats are already out of this world. Browned butter and sea salt kick it up a notch!

INGREDIENTS

  • 5 cups rice krispy cereal (about 1/2 box)
  • 1 stick (4 oz) butter
  • 1 bag marshmallows
  • Heaping 1/4 teaspoon sea salt

INSTRUCTIONS

  1. Brown your butter in a big pot. You need a big pot to start because you'll be adding everything else to this pot over time. Watch it closely, and stir constatly as it will easily burn! Put the stove on medium and it should turn from melted, to foamy, then turn golden and finally start to turn brown. You may see some brown flecks at the bottom of the pan too. Some say it will smell "nutty." If there are black flecks, then you are burning it because the heat is too high and/or you're not stirring constantly. 
  2. Take off heat and add marshmallows. Stir until the marshmallows are melted. You may need to add a little heat but the heat from the butter should be enough.
  3. Add salt. Stir more. If you dont' have sea salt, Morten's salt is fine also. 
  4. Add your rice krispy cereal one cup at a time and keep on stirring. If you can't find rice krispy brand cereal, it will be ok. The generic kind works fine too. 
  5. Butter or spray a glass or metal baking tin. Choose your size based on the shape rice krispies you want. You can do as small as an 8x8" pan, but this will make your rice krispies very tall. I recommend a 9x13" glass rectangle pan so the rice krispies are not so tall (which makes them hard to eat). I also recommend buttering the pan instead of using non-stick spray, but that's just because I'm not a fan of the taste of the spray.
  6. Add mixture to pan and spread out with non-stick spatula. Cover and let cool, then enjoy in about an hour!
