Korean Beef Tacos

So easy and always delicious! Great to throw together in the morning for a delicious dinner waiting for you after a day at work or on the beach.

INGREDIENTS

For the crock pot:

  • 1 14oz can of pears, drained
  • 1 tsp ginger powder
  • 2 tsp minced garlic
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1 tsp sesame oil
  • 2 lbs steak tips/top sirloin

For the tacos:

  • Chopped fresh cilantro
  • Chopped peanuts
  • Fresh chopped slaw
  • Sriracha mayo (you can make this yourself by combining mayo and sriracha until light pink)
  • Flour tortillas (small sized)
  • Jalapeños, chopped into circles or half-circles
  • Lime juice

SPECIAL TOOLS NEEDED

  • Crockpot or Dutch Oven
  • Blender
     

INSTRUCTIONS

  1. In blender, pulse pears, ginger, garlic, soy sauce, sugar, and sesame oil until mostly smooth to make sauce. It may not look like enough sauce for all the meat, but don't worry, it is. The meat will release juices as it cooks. 
  2. Add meat and sauce to the crock pot. (Cut meat into squares if needed)
  3. Cook for 4-6 hours on high or 8-10 hours on low. (The longer the better!) 
  4. If you don't have a crock pot, you can also use a dutch oven. Place the dutch oven in a regular oven at about 200 F for 8-10 hours. 
  5. Separate meat with forks, it should fall apart easily.
  6. Pulse peanuts in blender once to chop.
  7. Assemble tacos and enjoy!
